Classic Mojito Cocktail

This popular summer cocktail has its origins in Havana, Cuba. It’s a cocktail called a highball, meaning it has an alcoholic base and a larger proportion of anon-alcoholic mixer, often a carbonated drink like seltzer water or soda. Drinks like rum and coke, as well as gin and tonic are also considered highballs.
This is a versatile drink because it can be made with any flavor of rum - I usually use regular rum, but have also used mango rum as well as coconut rum to change things up a bit. However, the other ingredients remain the same.

Classic Mojito
Ingredients
- 8 large mint leaves
- 1/4 t white sugar
- splash lime juice
- 1 lime
- 2 1/2 oz. rum (regular, coconut, mango rum, etc. all work!)
- 2 oz. simple syrup or mint simple syrup, if you like extra mint flavor
- 4 ice cubes
- 4 oz seltzer water
- Splash dark rum (optional)
Instructions
- Wash and dry the 8 mint leaves and the 1 lime. Cut the lime into wedges.
- Place the mint leaves into a tall glass with 1/4 t sugar and a splash of lime juice (fresh or bottled). With a muddler or a wooden spoon, mash the mint well until its juices are released. Add the lime wedges and mash until all the juice is released.
- Add 2 1/2 oz. rum and 2 oz. simple syrup or mint simple syrup. Stir.
- Add 4 ice cubes and fill the glass with seltzer water (about 4 oz.). Gently stir, dipping your spoon or stirring utensil all the way to the bottom and lifting upward to mix the other ingredients with th seltzer water.
- Top with a small splash (called a float) of dark rum if desired, and garnish with a lime wedge and spring of mint to make it pretty.
