I like making rice as a side dish, but sometimes rice just doesn’t do it for me. That’s when I turn to pearl couscous. I’ve tried it many different ways over the years but I keep coming up to this recipe I created. I’ve tried this particular recipe with other cheeses such as parmesan and gruyere, but feta is always the winner. It gives the perfect amount of salinity to this dish, which I love to pair with a filet of salmon or some chicken.

Pearl Couscous with Mushrooms and Feta

This side dish of pearl couscous, onion, mushrooms, and feta cheese is the perfect blend of salty and savory, and is one of my favorites to pair with lighter meats such as chicken or salmon.

Ingredients

  • 1 C dry couscous
  • 1  1/2 C chicken or vegetable broth
  • 1 T butter or olive oil
  • 1/2 onion
  • 4-5 mushrooms (baby bella or white button)
  • 1 t garlic powder or garlic granules
  • 1/2 t onion powder
  • salt and pepper
  • olive oil
  • Feta cheese, crumbled

Instructions

  1. Heat a skillet under medium high heat. Place the 1 T butter or olive oil in the skillet to melt.
  2. Slice the half onion and slice the mushrooms. Add the onion to the pan and sauté for 5-7 minutes until softened, adding a pinch of salt if necessary to help the onions caramelize a bit.
  3. While the onions are cooking, add the 1  1/2 C chicken or vegetable broth to a small saucepan and bring to a boil. Add the pearl couscous, cover the pan with a tight-fitting lid, and reduce the heat to low. Let cook for about 12 minutes.
  4. Add the mushrooms to the pan with the onions and let cook until tender, about 3-5 minutes. Take off the heat and set aside.
  5. Once the couscous is done, add the mushrooms and onions to the saucepan along with a small drizzle of olive oil. Add the 1 t garlic powder, 1/2 t onion powder, and season with salt and pepper to taste. Mix to combine.
  6. Add as much feta cheese as you like (I use about 4 oz or so), mix, and serve immediately.
  7. Enjoy!
