When I want tacos but something with a little more greens, I turn to a perfect alternative - the taco salad. This recipe is very versatile. I usually make it with the usual beef, tomatoes, cheese and of course lettuce - but you can add any favorite toppings such as beans, green onions, salsa, jalapeños - whatever you like! Plus, this recipe makes a lot, so it’s perfect for leftovers the next day - I usually just add some fresh chips to restore some of that crunch.

Taco Salad

A delicious salad with all the spice and fixins of a taco. What's not to love?

Ingredients

  • 1 lb. ground beef
  • 1 packet taco seasoning
  • 2 heads of romaine lettuce
  • 1 pint cherry tomatoes
  • 1 1/2 C Mexican shredded cheese
  • ~ 30 Tortilla Chips (alternatively, Doritos or Corn Chips such as Fritos; I used Nacho Cheese Doritos in this recipe)
  • 1/2 C Kraft Catalina Dressing
  • 1/2 C sour cream
  • 1 T lime juice
  • Other toppings off choice (jalapeños, beans, green onions, etc.)

Instructions

  1. Brown the ground beef in a skillet over medium-high heat. Drain excess fat, then add as much of the taco seasoning as you like (I used about 3/4 of a 1.3 oz. Trader Joes taco seasoning packet). Stir until the seasoning is well combined. Take off the heat and set aside to cool a little.
  2. Make a slice down two ribs (the firm, white-ish stem) of the 2 heads of romaine lettuce (this will make the lettuce pieces a little smaller and more manageable when eating). Chop the romaine into half-inch strips, then place in a large bowl.
  3. Slice the cherry tomatoes in half lengthwise and add them to the bowl, along with the 1  1/2 C shredded Mexican cheese.
  4. Take the 30 tortilla chips, Doritos, or corn chips and crumble into small and medium pieces. You can do this by crushing in your (clean) bare hands, or by placing them in a Ziploc bag and crumbling that way for less mess. Add to the bowl.
  5. Add the slightly-cooled ground beef to the bowl as well as any other desired toppings, and toss everything to combine.
  6. Add the 1/2 C catalina dressing, 1/2 C sour cream, and 1 T lime juice and toss to coat.
  7. Serve right away.
  8. Enjoy!
