So I’m not on Tik Tok very often, but even I somehow heard about the Feta Pasta recipe that went viral. I got the Feel Good Foodie recipe from my Mother-in-Love, who raved about her own results, so I decided to give it a try! It came out so good. Restaurant-quality, right in my own kitchen, and on a weeknight to boot.

Feta Pasta with Herbed Chicken

This recipe went viral on Tik Tok - with good reason! Enjoy a restaurant-quality dinner on a weeknight at home with this satisfying meal. Adapted from the Feel Good Foodie recipe.

Ingredients

  • 2 chicken breasts (optional)*
  • 2 t dried oregano (optional)
  • 2 t dried basil (optional)
  • 8 oz. bowtie pasta (or other pasta of choice, such as cavatappi)
  • 2 pints cherry tomatoes (I used multi-colored heirloom cherry tomatoes)
  • 8 oz. block of feta cheese
  • 1/2 C extra virgin olive oil
  • 1/4 t salt
  • 1/4 t pepper
  • 2 garlic cloves
  • 1/4 C packed chopped fresh basil, plus more for serving

Instructions

Cook the Chicken (if using)
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Cover a baking sheet with foil and drizzle with olive oil or avocado oil.
  3. Drizzle the chicken with oil, and season the on all sides with with the 2 t dried oregano, 2 t dried basil, and a pinch of salt and pepper. Place in the oven and cook for 20-30 minutes or until internal temperature reads 165 degrees Fahrenheit.
  4. Once the chicken is done and cooled a bit, cut into bite-sized pieces.
Prepare the Feta Pasta
  1. Preheat oven to 400 degrees Fahrenheit. 
  2. Wash the cherry tomatoes and cut in half lengthwise.
  3. In an oven safe baking dish such as a 9" x 13" pan, place the tomatoes and 1/2 C olive oil. Toss to coat. Season with the 1/4 t salt and 1/4 pepper.
  4. Place the block of feta cheese in the middle of the tomatoes, and flip a couple times until coated with the olive oil, salt, and pepper.
  5. Bake in the oven for 35 minutes (this can be done at the same time as the chicken, if using).
  6. While the tomatoes and feta are cooking, prepare a pot of salted water and cook the pasta according to package directions.
  7. Mince the 2 cloves of garlic.
  8. Chop the basil leaves.**
  9. Once the tomatoes and feta are cooked (tomatoes should be burst and feta should be melting), immediately add the garlic and basil and stir to combine.
  10. Add the cubed chicken (if using) and cooked pasta; toss to combine. Top with any remaining fresh basil and serve warm.
  11. Enjoy!

* I used herbed chicken, but you can use ground beef, ground sausage, or slices of Italian sausage if you want some extra protein in this dish (or if, like me, you have a meat eater in your household).

**An easy way to cut fresh basil and other flat leafy greens, such as spinach, is using a technique called chiffonade. Stack the leaves on top of one another with the biggest leaf on the bottom, and tightly roll the leaves up into a cigar shape from the long side of the leaf. Thinly slice the leaves perpendicular to the cylinder / cigar shape, and you’ll be left with little ribbons of basil - which is what chiffonade means.
