Oh no! You forgot you had bananas and now they’re getting brown over there on the counter! What to do, what to do? As the saying goes, when life gives you lemons you made lemonade, right? Well I say, when life gives you brown bananas, you make banana bread!

I’ve made banana bread dozens of times, but about a year ago I decide to throw caution to the winds and toss some chocolate chips in there. It was a major epiphany, like the heavens had opened up. I’m never making plain banana bread again! This super easy, super moist banana bread doesn’t require any special tools or ingredients, and comes out perfect every time.

Chocolate Chip Banana Bread

This super easy, super moist banana bread with chocolate chips is a perfect breakfast, snack, or dessert. And a perfect use of those bananas going brown on your counter! Adapted from the House of Nash Eats recipe.

Ingredients

  • 1/3 C unsalted butter, melted
  • 4 ripe bananas
  • 3/4 C white sugar
  • 1 egg, beaten
  • 2 t vanilla
  • 1 t baking soda
  • 1 t baking powder
  • 1/2 t cinnamon
  • 1/4 t nutmeg (optional)
  • 1/4 t ground cardamom (optional)
  • 1/8 t salt
  • 1 1/2 C all-purpose flour
  • 1/2 C semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Lightly grease and flour a loaf pan (4.5" x 8.5" inch preferably but 5" x 10" is fine too). To do this, spray the pan down with coconut oil or avocado oil spray, and place about a tablespoon of flour in the pan. shake the flour all around the pan until there's an even dusting all over the inside of the pan, including the sides.
  3. In a small pan, melt the 1/3 C butter over medium heat. Alternatively, melt in the microwave for 50-60 seconds on high. Once melted, set aside to cool.
  4. In a large bowl, mash the 3-4 bananas with a fork or a potato masher. Add the butter, making sure it is not hot (we do not want to scramble the egg).
  5. Add the 3/4 C white sugar, 1 beaten egg, and 2 t vanilla. Mix well with a wooden spoon or sturdy spatula.
  6. Sprinkle the 1 t baking soda, 1 t baking powder, 1/2 t cinnamon, 1/4 t nutmeg, 1/4 t ground cardamom, and 1/8 t salt over the banana mixture and stir to combine.
  7. Add the 1 1/2 C flour and 1/2 C chocolate chips and stir until no streaks of flour remain. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, until a toothpick inserted in the center of the loaf comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire wrack. 
  9. Once cooled completely (or not!) cut into thick slices and serve!
