There’s nothing like a cool meal after a hot summer’s day, and this pasta salad fits the bill! I usually make it in the morning or around lunch time, then refrigerate until dinner, allowing the flavors to mix and mingle. It’s hearty enough for the meat eater in your family, but light enough that you don’t feel totally stuffed. Win win!

Pasta Salad with Summer Sausage

Packed with veggies and protein, this cold pasta salad is a perfect meal for a hot summer day!

Ingredients

Pasta Salad
  • 8 oz farfalle pasta (aka bowtie pasta)
  • 1 English cucumber
  • 1/2 onion (yellow or sweet vidalia)
  • 1 beef summer sausage
  • 1 - 2 8 oz blocks of mozzarella cheese
  • 8 oz cherry tomatoes
Dressing
  • 1 t dried oregano
  • 1 t dried basil
  • 1 t onion powder
  • 1 t garlic powder
  • 1 t dry mustard
  • 1t salt
  • 1/2 t pepper
  • 3/4 C olive oil
  • 1/2 C Garlic Expressions Classic Vinegarette
  • 1/4 balsamic vinegar
  • 1/4 C red wine vinegar

Instructions

  1. Cook farfalle pasta according to directions. Drain and rinse under cold water to cool.
  2. Dice the 1 English cucumber and half onion; half the 8 oz cherry tomatoes. 
  3. Cut the 1 summer sausage and block(s) of mozzarella cheese into small bite-sized cubes. Add all to a large bowl, along with the farfalle pasta, and toss to mix.
  4. In a large mason jar or blender bottle, combine the 1 t oregano, 1 t basil, 1 t garlic powder, 1 onion powder, 1 t dry mustard, 1 t salt, 1/2 t pepper, 3/4 C olive oil, 1/2 C Garlic Expressions, 1/4 balsamic vinegar, and 1/4 C red wine vinegar. Shake to mix.
  5. Pour as much of the dressing as you like on top of the pasta salad and mix well. Cover and refrigerate for 2-8 hours until cold and flavors have had time to meld.
  6. Serve cool; I like to get the bowl out about a half hour before serving to let it warm up just a bit. Keep in the fridge for 2-3 days in an airtight container.
