This Overnight French Toast Casserole recipe is nearly identical to my regular French Toast recipe with one notable exception - the sweet, crunchy, oh-so-yummy streusel topping.

Did you know that? Streusel is a crumbly topping made with flour, sugar, fat, and usually cinnamon and may include nuts. It can be put on top of breakfast casseroles like this one, muffins, or even sandwiched between two layers of cake, as in a coffee cake! It’s a German word meaning “something scattered or sprinkled.” Now you knooow! Name that show.

French Toast Casserole

This Overnight French Toast Casserole is a breeze to make, with minimal prep required before tossing in the oven. Pair with fresh fruit and a side of bacon or sausage for a perfect Sunday brunch!

Ingredients

Casserole Ingredients
  • 1 loaf of bread*
  • 10 eggs
  • 2 1/2 C milk
  • 1 T vanilla
  • 3 t ground cinnamon
  • 1/2 t nutmeg
  • 2 T sugar
  • 1 t salt
Streusel Topping (can prepared the day before or the day of)
  • 1/2 C all-purpose flour
  • 1/2 C brown sugar
  • 1 t cinnamon
  • 1/4 t salt
  • 1/2 C butter (1 stick), cold

Instructions

  1. Butter a 9"x13" pan or coat with cooking spray.
  2. Cut the loaf of bread into bite-size cubes and place into the pan.
  3. In a large mixing bowl, beat the 10 eggs. Add the 2 1/2 C milk, 1 T vanilla, 3 t ground cinnamon, 1/2 t nutmeg, 2 T, and 1 t salt and whisk to combine. Pour evenly over the bread cubes.
  4. Cover the pan with a tight-fitting lid or plastic wrap and refrigerate for 6 hours - or overnight for best results.
  5. The following morning, preheat the oven to 350 degrees Fahrenheit.
  6. Prepare the streusel topping: mix the 1/2 C all-purpose flour, 1/2 C brown sugar, 1 t cinnamon, 1/4 t salt in a medium bowl.
  7. Cut the cold 1/2 C butter (1 stick) into small cubes, then using a pastry blender, cut the butter into the flour mixture** until a crumbly texture is achieved and the butter pieces are about the size of small peas. NOTE: If you have minimal time and want to prepare the streusel topping beforehand, follow the same directions, and just store separately in the refrigerator, covered, until the next morning.
  8. Spread the streusel topping evenly over the top of the French Toast Casserole, then bake in the oven for 45-50 minutes until the top is golden brown and a knife or toothpick inserted into the center comes out clean.
  9. Serve warm with syrup, fruit, or on its own!

*As in my regular French Toast recipe, I prefer to use Challah bread for this, but any non-herb, non-cheese type bread should work, especially if it’s gone stale, which is perfect! The more stale it is, the more liquid it will absorb.

** A pastry blender sounds really technical and maybe a little fancy, but it’s really a very simple baking tool. To use a pastry blender, grip the handle and press the blades down into the butter / flour mixture. Make a quick half- or quarter-turn and it will cut the butter. Repeat this motion several times in quick succession (after which point the butter will probably clump up - just knock it back into the bowl using a fork or butter knife), and repeat until the desired consistency is reached.
