Lemon Dill Salmon with Dill Cream Sauce

Earlier this year my husband and I started an Aerogarden, which is an indoor hydroponic garden solution. We’ve been growing fresh herbs, one of which is dill, so I’ve had no shortage for recipes just like this one!
I personally prefer to cook my salmon in the air fryer for ultimate moisture and time efficiency, but since not everybody has an air fryer, I listed three different ways this recipe can be cooked: air fryer, oven, and stovetop. Let me know which way is your favorite!

Lemon Dill Salmon with Dill Cream Sauce
A classic lemon dill salmon, prepared three ways and paired with a beautiful dill cream sauce.

Ingredients
- 1 lb. salmon
- 1 lemon
- 1 bunch fresh dill (or about 2 T dried dill weed)
- salt and pepper
- olive oil or avocado oil
- 1/2 C sour cream
- About 2 t lemon juice, fresh or bottled
Instructions
Prep
- Finely chop the dill, discarding any large stems.
- Slice the lemon into thin rounds, discarding the ends.
- Cut the salmon into two equal filets. Pat dry with a paper towel. Drizzle the with olive oil, then season with a pinch of salt and pepper. Top with as much dill as you like.
Option 1: Cook the Salmon in an Air Fryer
- Preheat your air fryer to 200 degrees Fahrenheit. Top each salmon filet with 2-3 slices of lemon and cook in the air fryer for 30-45 minutes, depending on the thickness of the salmon, until it reads a temperature of 145 degrees Fahrenheit.
Option 2: Cook the Salmon on the Stovetop
- In a large skillet, heat about a tablespoon of olive or avocado oil over medium-high heat. Place the salmon in the pan, skin-side down first. Let cook for 3-4 minutes until golden and crispy. Carefully flip the salmon and cook for another 2-3 minutes until golden brown, then flip again. Add some more fresh dill and 2-3 lemon slices per filet, and let cook for another 2-3 minutes or until the internal temperature reads 145 degrees Fahrenheit.
Option 3: Cook the Salmon in the Oven
- Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with foil for easy cleanup. Top each salmon filet with 2-3 slices of lemon and cook for 20-30 minutes, depending on thickness, or until the internal temperature reads 145 degrees Fahrenheit.
Make the Cream Sauce and Finishing Touches
- In a small bowl, place 1-2 T of fresh dill (or 1 T dried dill weed), 1/2 C sour cream, about 2 t of lemon juice, and a pinch each of salt and pepper. Stir to combine.
- Top cooked salmon with as much cream sauce as you desire. Serve warm, and enjoy!
