This dish was traditionally made by my mom for Thanksgiving. It’s the dish that made me fall in love with sweet potatoes. We add a little butter and brown sugar for extra sweetness, but you can add honey, cinnamon or even some marshmallows! Regardless of how it’s prepared, this is a perfect side dish for a variety of entrees.

Candied Sweet Potatoes

Sweet potatoes get sweeter with a mix of brown sugar and butter to become a side dish worthy of any entrée.

Ingredients

  • 2 large sweet potatoes
  • Olive Oil
  • Salt
  • 4 T butter
  • 3 T brown sugar

Instructions

  1. Preheat the oven to 400 degrees.
  2. Scrub the sweet potatoes to rid them of any dirt and pat dry. Place the potatoes on a foil-lined baking sheet. Poke each potato with a knife about 6-8 times to allow steam to escape. Coat the potatoes all over with olive oil and sprinkle with salt. Bake in the oven for 45 minutes to 1 hour until easily pierced with a knife.
  3. Let cool for 10-15 minutes until easy to handle.
  4. Peel the skins off using your fingers or a knife, and cut into chunks. Place the potatoes in a skillet with the 4 T butter and 3 T brown sugar. Add a pinch of salt and gently mix all the ingredients, allowing the butter to melt and the  brown sugar to caramelize for about 5-7 minutes.
  5. Serve immediately and enjoy!
