B.L.T. Salad

I was looking for a bread-free alternative to a BLT sandwich when I came up with this salad. We always add avocado to our BLT sandwiches for a bit of texture variance and extra flavor, so that was a given. But when my husband requested some cheese in this salad, I knew this was going to be a winner winner salad for dinner.

BLT Salad
This salad takes your favorite BLT sandwich and deconstructs it, adding some different flavors to produce a scrumptious salad the whole family will enjoy!
Ingredients
- 6-8 pieces thick bacon
- 2 heads romaine lettuce
- 8 oz. cherry tomatoes
- 8 oz. mozzarella cheese pearls
- 3 avocados
- Lemon or Lime juice
- 8 oz. olive oil
- 6 oz. balsamic vinegar or balsamic glaze
- 2 t dry mustard
- 1/2 t onion powder
- 1 t garlic powder
- 2 t salt
- 1/2 t pepper
Instructions
Make the Salad
- Drain the mozzarella pearls, keeping them in their original container. Drizzle with a little olive oil, some balsamic vinegar, and add a pinch of salt. Put the lid on and shake to mix, then place into the refrigerator to marinate.
- Cut the bacon in 1-inch pieces. Heat a heavy skillet over medium-high heat and cook the bacon until cooked through and just crispy. Set aside on a paper-towel lined plate to drain.
- Make a slice down two ribs (the firm, white-ish stem) of the 2 heads of romaine lettuce (this will make the lettuce pieces a little smaller and more manageable when eating). Chop the romaine into half-inch strips, then place in a large bowl.
- Half the 8 oz. cherry tomatoes and add to the bowl.
- Cube the 2-3 avocados, and place in a small bowl. Add a splash of lemon or lime juice and toss to coat. This will prevent the avocado from turning brown. Add to the bowl with the tomatoes and lettuce.
- Remove the mozzarella pearls from the fridge and add to the bowl with the other ingredients. Toss everything to combine. Serve immediately with the balsamic salad dressing recipe below and enjoy!
Balsamic Salad Dressing
- In a jar or a blender bottle, mix the 8 oz olive oil, 6 oz. balsamic, 2 t dry mustard, 1/2 t onion powder, 1 t garlic powder, 2 t salt, and 1/2 t pepper. Shake or whisk to combine.
